With tomatoes, rice, spinach and cheese
Serves 2 – 4 | Prep 8 min | Cooking 12 min
What you need:
1 pack Green Guru tofu (smoked paprika or pepper garlic)
¾ C grated cheese of choice
250g of spinach (1 pack/bunch)
2 medium tomatoes
1 Tbls coconut oil
2 tsp olive oil
½ tsp soya sauce
1 ½ C cooked brown rice
Pinch of salt
Do the following:
Wilt the spinach – wash and destalk the spinach, place wet in a pot, add 2 tsp olive oil and ½ tsp soy sauce and cook on low heat, with lid on, for ± 10 min until spinach is tender and still a fresh green colour.
Slice tofu into 6 thin squares, place on an oven tray, with the grated cheese on top and place under the grill. Cook till cheese is properly melted.
Place 1 Tbls of coconut oil into a hot pan, add the tomatoes (thickly sliced), the cooked rice, salt and heat up. You don’t want to cook the tomatoes much, just heat them up.
Plate the rice and tomatoes on a plate, and in the middle start with one layer of cheesy tofu followed by some wilted spinach, repeat three times till your stack is built.
Take note:
You could leave out the rice and make these with tomato rounds layered in the stack. The stacks then sliced in half looks great and would make an impressive and very tasty starter
