What you need:
1 pack Green Guru Tofu
1/3 Cup unsweetened soya milk or other milk
1 tsp turmeric powder
4 thick slices ciabatta bread
2 Tbls coconut butter or other
3 – 4 fat pinches salt
1 Tbls chopped chives
Drizzle of olive oil
Do the following:
In a pan, on medium, heat the milk and turmeric powder till bubbling.
Crumble the tofu into the pan with your fingers.
Cook for 5 min. Add a splash more milk if it looks dry.
Add salt to taste.
Toast the ciabatta slices and butter them with coconut butter whilst they are hot.
Place scrambled tofu on ciabatta toast and top with chives and a fine drizzle of olive oil.
Try this:
Add to a full breakfast with beans, vegan sausage, avocado, mushrooms and tomatoes.
Add to a wrap with avocado, lots of lettuce, tomato, salad dressing and chili sauce.
Add to a large soft bun with mustard, sliced veg sausage and sauerkraut.
